Also, one needs to consider other qualities like resistance to corrosion that greatly affect the level of precision of the instrument and so should not be taken for granted.

Although this type of thermocouples has many uses, it not always good since they are not accurate. There are digital ones that are able to indicate the numbers and are many people prefer them. The usual thermostat will not show the numbers and especially any number with a decimal point.
