Discover What You Must Know About Vegetarian Recipes

If you are looking for authentic Indian taste, then you will love these delicious vegetarian recipes. These simple recipes involve copious use of vegetables. You can start by preparing the sauce.

All that is needed is 1 tablespoon of sunflower oil, 50g of chopped onion, 2 teaspoons of good quality Madras curry powder, 1 heaped teaspoon of tomato puree, 150ml of red wine, 120ml of water, 1 bay leaf, a pinch of salt, sugar, a twist of pepper, the juice of half a lemon and 2 tablespoons of apricot jam or mango chutney.

Heat the oil in a pan and cook the onions till transparent. Add tomato puree and curry power and let it cook for few minutes. Add the remaining ingredients and let it cook for another ten to fifteen minutes. Let the mixture cool down and then strain it through the sieve. Your first part of vegetarian recipes is ready

An ideal dish to serve this with is apple and celery salad. All this needs is 2 granny smith apples, 4 celery sticks, 1 tablespoon of plump sultanas, a squeeze of lemon juice and 150ml of double cream.

Peel and cut apples like match sticks. Cut celery sticks in the same way. Mix apples, celery sticks and lime juice in a bowl and refrigerate it for half an hour. Add double cream and the sauce made earlier before serving.

You can use this sauce for cauliflower cheese dish also. You have to first cut the cauliflower into florets and also need a few other ingredients; 30g butter, half teaspoon cumin seeds, 1 pinch chili powder, 300ml milk, 50g plain flour, 1 teaspoon English mustard, 125g grated cheddar cheese and 1 green chili chopped finely.

Boil the florets for 5 minutes and drain them. Pre heat the oven to 180C. Melt the butter in a pan and splutter the cumin seeds, add the chili powder and flour. Slowly add milk to avoid lumps. Whisk this mixture thoroughly and let it cook on low fame to form a smooth paste.

The cheese mustard, and curry sauce from earlier, can now be added. Once combined, a little should be poured into an ovenproof dish, and the cauliflower added. The rest of the sauce can be poured over the top, with a sprinkling of cheese and cooked in the oven until brown and bubbling. It should be served immediately.
